Mint Sauce
from Christine Wallace, Cuckoo Hill Allotments.


A must to go with a lovely roasted British Spring Lamb joint or some succulent lamb chops from New Zealand.

But you can use it for other dishes.




Mint Sauce
Picture will arrive in Spring! promises Christine.
Ingredients:

¼ cup chopped mint leaves
boiling water
1 tablespoon sugar
½ cup malt vinegar
salt


Method:

Put the chopped mint in a jug.

Cover with boiling water.

Add the sugar, stir until dissolved

Add the vinegar.

Add salt to taste.

Cooking Time:

Up to 10 minutes.

Final Tip:

You can freeze mint so that you have some available to use all year round.

Or just use the fresh mint with our Gardener's Salad recipe
