Spicy Windfall Cake

Now that that we’re having some gusty weather, the last of my apples are coming down, and this recipe is an old favourite for using them up. It can be eaten warm from the oven, and even serve it with custard.

Frances's Windfall Apples

Ingredients:

1lb of windfall apples, weighed when peeled, cored and chopped
4oz Demerara sugar
4oz sultanas
9oz self raising flour + a pinch of salt
2tsp cinnamon
6oz margarine
3oz pecan nuts
2 eggs

Method:

Grease and line an 8inch cake tin. Sift the flour, cinnamon and salt into a bowl and rub in the margarine. Stir in the sugar, sultanas and apples. Mix in the eggs with a spoon then add the pecans, reserving a few to decorate the top. Put the mixture into the cake tin.

Cooking Time:

Put the cake tin into the oven and cook for 50 minutes at 180 ° C (Mark 4).
