Courgette Chocolate Cake

Mid summer and a lot of our hard work on the allotments is flowering and fruiting. If like myself, you vowed not to grow courgette again this year, after the glut you had last year, and then go and do exactly that, plant courgettes again and hope you don't repeat the bumper harvest and can't get rid of them faster than they grow!

This year I have grown several varieties of Courgettes and also some Patty Pan (in Squash family) which I will be experimenting with and report back with recipes.

Here is a recipe for a dessert when you get tired of having Courgettes in a Starter or Main.

350g courgettes

125g butter

225g brown sugar

115g white sugar

3 eggs

550g plain flour

1 tablespoon vanilla

118ml Yoghurt

2 tablespoons baking powder

1 teaspoon cinnamon

teaspoon mixed spice

teaspoon salt

60g cocoa powder

225g chocolate pieces


Line a 23cm square cake tin.

Beat Butter and Sugar, add egg at a time, add a little flour if signs of 'splitting'.

Mix in yoghurt and vanilla.

Mix well add all the 'dry' ingredients EXCEPT chocolate pieces.

Add the grated courgette and mix well

Pour onto tin and sprinkle chocolate pieces.

Cooking Time:

Bake for 35-45 minutes or until skewer comes our clean when pierced into the centre of the cake.

Leave to cool slightly in oven for half an hour with the door ajar

Turn out on to a cake rack to cool completely.
