Christmas Creamed Parsnips

Like Brian’s carrots, my parsnips are strangely shaped because I don’t thin them.

This simple recipe is a family favourite, especially with Christmas dinner, and was apparently very popular in the 16th and 17th centuries as a sweet dish to accompany savoury dishes.

This dish is not just for Christmas!


Judy's Parsnips
Judy's Creamed Parsnips
Ingredients:

1lb Parsnips
1/4 pint of single cream or butter and milk
Salt
Pepper
Grated Nutmeg
Parsley

Method:

Peel the parsnips, removing the core if it is very woody.

Chop roughly and cook in boiling water until very tender, about 10 minutes.

Drain thoroughly.

Purée the cooked parsnips in a food processor with the cream (or butter and milk). The quantities are not critical, but the texture should be creamy, not too dry and not too runny.

Season to taste. We like black pepper and nutmeg.

Cooking Time:

Approximately 10 minutes.

Final Tip:

This dish can be prepared in advance and reheated in the oven or in the microwave.
