Judy's Choc'n'Beet Cake

This is an easy to make cake and not too sweet.

Chocolate and Beetroot work, try it.

Judy's Choc'n'Beet Cake - photos promised


Ingredients:

250g of cooked and grated beetroot
300g brown sugar
125g of melted butter
3 large eggs
225g of flour
1 teaspoon of baking powder
50g of cocoa powder
75g of melted dark chocolate

Method:

To cook the beetroot:

Firstly cut off the leaves to leave 1" stem, taking care not to cut the skin or root

Boil the beets until tender, or bake at 160șC for about 1 - 1.5 hours

Simply rub off the skins, let them cool, then grate

To prepare the cake mix:

Beat the butter, sugar and eggs together well

Mix in the melted chocolate and fold in the flour, baking powder and cocoa.

Fold in the grated beetroot at the end

Pour the cake mixture into a greased 9 inch cake tin.

Cooking Time:

Preheat the oven to 160șC.

Bake in the oven for 45 minutes, or until an inserted skewer comes out clean..

Final Tip:

Serve to your children or guests but do not tell them until afterwards what they are eating. Watch the surprise on their faces.
