Frances's Quick Carrot Cake

If you are lucky enough to be given some surplus carrots by a growing partner then here is a recipe to turn them into a delicious cake - quickly and simply!

Frances's Quick Carrot Cake

Ingredients:

250g of peeled & grated carrots
grated zest from 1 orange
100g sultanas
100g chopped pecans
150g soft margarine, melted
250g wholemeal self raising flour
1 teaspoon cinnamon
1 teaspoon grated nutmeg
1 teaspoon of bicarbonate of soda
150g soft dark brown sugar
3 eggs

Method:

Heat the oven to 180 ° C (Mark 3).

Prepare and line 2 sandwich tins

Whisk the melted margarine, sugar and eggs in a large bowl until the volume is almost doubled.

Add the sifted flour and bicarbonate, with the spices. Fold the mixture together gently, then add the carrot, pecans and sultanas and fold them in.

Divide the mixture between the tins and bake for about 30 minutes until a skewer or cake tester comes out clean.

When cool, decorate with buttercream icing and decorate with orange and lemon jelly slices.

Cooking Time:

The oven should be at 180 ° C (Mark 3). For a deep cake tin allow about 60 mins and for shallow tins 30 mins.
