Melting Marrow

A delicious way to serve that marrow, and it also works with courgettes.

Diana's Melting Marrow

Ingredients:

2 lb/1 kg marrow or courgette
2 tablespoons vegetable oil
½ teaspoon ground coriander
½ teaspoon dried sage (or use fresh sage)
½ teaspoon ground cumin
2 oz butter

Garnish:

6oz grated cheddar cheese
Parsley

Method:

Peel, deseed, and chop marrow into 1” cubes.

Place all the ingredients together in a saucepan.

Cook slowly, and stir occasionally until marrow is softened.

Place into serving dish and add the garnish.

Cooking Time:

Approximately 15 mins

Final Tip:

Experiment with any cheese and garnish of your choice.
