Courgette Spaghetti

Or to be totally correct, should that be Zucchini Spaghetti?

Diana's Courgette Spaghetti

Ingredients:

5 - 6 medium courgettes, coarsely grated
400g spaghetti (freshly harvested or dried)
3 tablespoons olive oil
2 medium cloves garlic, finely chopped
Salt and Pepper

Garnish:

2 tablespoons chopped fresh mint
Grated Parmesan cheese

Method:

Put the grated courgette into a colander and sprinkle with salt. Leave for about 20 mins, then rinse well and pat dry.

Put spaghetti on to cook until al dente.

In large frying pan, heat oil and fry courgettes over high heat for a couple of minutes, then turn the heat down and cook for a further 10 mins, stirring from time to time and without letting the courgettes colour.

Add the garlic and cook for a minute or two.

Toss the courgettes with the drained spaghetti, grind pepper over, then sprinkle chopped mint and Parmesan over the top.

Cooking Time:

Approximately 15 mins

Final Tip:

Mint can be substituted with freshly grown basil.
