Courgette Cake

When you have tried courgettes in every way possible then you may not have thought of putting them in a cake.

Plus - Christine Wallace of Cuckoo Hill Allotments advises that if you leave out the nuts then this turns the recipe into Zucchini Bread


Diana's Courgette Cake
Diana's Courgette Cake
Ingredients:

16 oz shredded courgette
3 eggs
10 oz sugar
½ pint cooking oil
1 teaspoon of vanilla extract or grated zest of a lemon

12oz plain flour
1 teaspoon of bicarbonate of soda
3 oz of chopped nuts
3 teaspoon of cinnamon
½ teaspoon of baking powder

Method:

Beat courgette, eggs, sugar, oil, and vanilla (or lemon zest) together.

Beat in the remaining ingredients to make a thin batter.

Cooking Time:

Place tins into oven and bake for 1 hour at 160 ° C (Mark 3) until a skewer comes out clean when pushed into cake.

Leave for about 10 mins then turn out onto a rack to cool.

Final Tip:

This cake freezes well so you can store some away!
