Simple Griddled Courgettes
from Brian Vaughan, Cuckoo Hill Allotments.


For a Mediterranean starter/antipasti or side dish with fish or meats nothing beats the taste of these griddled veggies.

And best of all they can be jarred in oil and preserved until you need them long after the courgette glut!



Green and yellow marrows
Griddled Courgettes mmmmmh!
Just eat as a snack or nibbles with drinks!

Ingredients:

Some freshly picked courgettes (aka zucchini) or young marrow
Salt
Pepper
Olive Oil
Herbs (optional)


Method:

Slice the courgettes thinly lengthwise or across depending on size.

Lay out and sprinkle with salt, pepper and drizzle over some olive oil.

You can sprinkle some mixed herbs at this point too(optional).

Leave to stand while you bring a griddle up to hot.

Lay courgette slices oil side down onto griddle for a couple of minutes.

Turn courgettes when they have griddle lines.

When both side are done, stack on a plate or into a bowl.

They can be served hot or even more deliciously cold.

Final Tips:

Pack into sterilised jars with olive oil and they will keep for several weeks if not months.
